Comfort food doesn’t necessarily mean unhealthy food. Sometimes what you need to brighten your day and lift your spirits is a hearty meal that warms you to your core. Jambalaya is just the meal for that. This flavorful dish is well balanced, packed with protein, and can be customized to your taste. Try this recipe as is, swap in shrimp for the chicken, or add in some kidney beans for extra vitamins, minerals, and fiber.

Ingredients

  • 1 Tbsp cooking oil
  • 1-2 Tbsp Cajun seasoning (adjust to your personal spice preference)
  • 16 oz Andouille sausage sliced into rounds
  • 1 lb chicken breast cut into 1 in cubes
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 4 cloves of garlic, minced
  • 14 oz can crushed tomatoes
  • 1 tsp salt
  • ½ tap black pepper
  • ½ tsp red pepper flakes
  • ½ tsp cayenne powder
  • 2 Tbsp worcestershire sauce
  • 1 ½ cups uncooked rice (short or long grain)
  • 3 cups chicken broth

 

Instructions:

  1. Heat 1 Tbsp of oil in a large pot or dutch oven over medium heat.
  2. Brown sausage in the hot oil; remove from oil and set aside. Add the chicken to the oil and saute the chicken until lightly browned. Remove from oil and set aside. 
  3. Saute the onion and bell peppers until the onion is soft and transparent. Add garlic and cook until fragrant. 
  4. Stir in tomatoes, add seasonings, and worcestershire. Simmer for 1 minute.
  5. Stir in sausage and chicken, cook for 4 minutes.
  6. Add in the rice and chicken broth. Bring to a boil, then reduce heat to low-medium. Cover and let simmer for 20-25 minutes or until liquid is absorbed and rice is cooked. Stir occasionally.
