CORE Nourish Recipe

CORE Nourish is a nutritional guidance program at CORE. We want you to know that eating healthy doesn’t mean you’re stuck with bland and boring foods. Each month we’ll provide a new recipe to spice up your diet. This month’s recipe is Loaded Avocado Toast with Bacon Jam and Hot Honey.

 

While bacon may not be the first thing that comes to mind when thinking of a nutritional meal, it is a great source of protein, and let’s be honest it’s savory flavor provides satisfaction to your taste buds. Avocados provide healthy fats, eggs provide healthy fats and protein, gruyere cheese is a source of calcium, and arugula can help decrease inflammation. 

 

Overall, this breakfast, brunch, or lunch is full of whole foods, limited preservatives, and is a complete plate. That means it helps stabilize your blood sugar and you feel full and satisfied for longer. And since you won’t use all of your bacon jam, you can save it to use for other recipes (like burgers, flatbreads, or whatever else your heart desires). Bacon Jam

 

Ingredients:

  • 1lb bacon, finely chopped
  • 2 yellow onions, thinly sliced
  • 4 cloves garlic, miced
  • ½ cup brown sugar 
  • ¼ cup apple cider vinegar
  • ¼ brewed coffee
  • 2 tbsp maple syrup
  • ½ tsp red chili flakes

 

Instructions

  1. Start by cooking the finely chopped bacon in a large skillet over medium heat. The goal is to render out the fat and get the bacon pieces crispy. This usually takes around 10-15 minutes. 
  2. Once the bacon is crisp, use a slotted spoon to remove it from the skillet and set it aside on a plate lined with paper towels to drain. Leave behind the rendered bacon fat in the skillet, as it’s packed with flavor.
  3. In the same skillet with the bacon fat, add the thinly sliced onions. Cook them over medium heat until they begin to caramelize, about 20 minutes and until they are softened and golden brown.
  4. Add the minced garlic and cook for an additional two minutes, until fragrant.
  5. Mix in the crispy bacon in with the caramelized onions and garlic.
  6. In a bowl, whisk together brown sugar, apple cider vinegar, brewed coffee, maple syrup, and red chili flakes. Pour this mixture into the skillet and mix.
  7. Let the mixture simmer on low heat for about 30 minutes. The liquid will reduce, thickening the mixture to a jam-like consistency.
  8. Once the mixture reaches the desired consistency, remove the skillet from the heat and let the bacon jam cool for a few minutes.
  9. If you prefer a smoother consistency, transfer the cooled jam to a food processor and pulse a few times.
  10. Transfer the jam to a sterilized glass jar and seal tightly. Your bacon jam is now ready to be enjoyed!

 

Loaded Avocado Toast

 

Ingredients:

  • ½ avocado
  • Lemon juice
  • Toast (any bread will do)
  • ¼ cup Gruyere cheese, shredded
  • One egg
  • Mike’s hot honey
  • Butter
  • Arugula
  • Your preferred seasonings (salt, pepper, onion powder, paprika, etc)

 

Instructions:

  1. Mash ½ of an avocado with salt, pepper, and other seasonings to taste. Squeeze a little lemon juice to mashed avocado to prevent discoloration.
  2. Toast a slice of bread in the toaster or in a skillet with butter to your desired level of toastiness. While the bread is cooking, cook the egg in your preferred style (scrambled, sunny side up, over easy, etc.).
  3. Melt the cheese on top of the egg while it finishes cooking.
  4. Assemble the avocado toast. Add bacon jam to bread, top with mashed avocado, egg, arugula, and drizzle with hot honey.
  5. Enjoy!
